Chicken Cordon Bleu

Ingredients:

4 1" Thick Chicken Breasts
8 Square Slices of Ham
8 Square Slices of Swiss Cheese
1/4 cup Chicken Broth
1/4 cup Melted Butter
1/4 cup Olive Oil
1 Tbsp. Garlic Salt with Parsley
1/2 cup Italian Style Bread Crumbs
1 Tbsp. Parmesan Cheese
1 tsp. Paprika
1/2 tsp. Black Pepper
1/2 tsp. Salt
1 Tbsp. Pilleteri's Italian Seasoning

Directions:

In a medium bowl, mix Bread Crumbs, Parmesan Cheese, Paprika, Salt, Pepper, and Italian Seasoning. Set aside.

In a small measuring cup mix Chick Broth, Olive Oil, Butter, and Garlic Salt. Set aside.

Cut each Chicken Breast in 1/2" thick pieces. Take 2 slices of Ham and 2 slices of Swiss Cheese, cutting each into triangular shaped halves. Make 2 layers of the Ham and Swiss on each Chicken Breast. Roll up the Chicken, Ham, and Swiss, using toothpicks to keep the resulting roll from falling apart. Dip each roll in the Broth, Oil, Butter mixture and cover with a layer of the Bread Crumb mixture.

Bake in the oven on 350°F heat for 30 minutes until juices run clear and tops are golden brown.

Makes 8 servings.
